You keep the kitchen running. Dish and glass wash, pot wash, and a clean back of house. High tempo during service, reset in
between. Some shifts you're alone in the dish pit, some shifts you're two or three. Since you work across different kitchens, the
exact setup changes — you get the details before each assignment.
